Preparation and Characterization of Beta-Sitosterol-Loaded Nanostructured Lipid Carriers for Butter Enrichment

    In the 2017 study, researchers successfully created betasitosterol-loaded nanostructured lipid carriers (NLCs) to enhance the nutritional profile of butter. The NLCs had a particle size of 165 nm, a polydispersity index of 0.21, a zeta potential of -13.5 mV, and an encapsulation efficiency of 96.9%. These NLCs remained stable in butter for three months, with no significant changes in particle size or polydispersity index, and the butter's quality indicators, such as acid and peroxide values, were maintained. The antioxidant capacity of betasitosterol was also preserved when encapsulated in the NLCs. The study concluded that these NLCs could be an effective way to produce functional dairy products with potential health benefits, particularly in reducing cardiovascular risks associated with butter consumption.
