Usefulness of the Green Coffee Bean Fermented Product as a Cosmetic Material for Scalp Hair Protection

    The study investigated the effectiveness of fermented green coffee beans as a cosmetic material for scalp hair protection. The green coffee beans were fermented using Effective Microorganisms (EM) and malt in a double fermentation process. The active ingredients (caffeine, polyphenol, flavonoid, and sugar) and effectiveness (antioxidant activity, anti-inflammatory activity, and dermal papilla cell growth rate) were analyzed. The results showed an increase in caffeine and sugar content during fermentation, while total polyphenol and flavonoid content decreased. The fermented product demonstrated excellent antioxidant, anti-inflammatory, and dermal papilla cell growth rates, particularly when enzyme fermentation was conducted at 60℃. The study concluded that the fermented green coffee bean product could be used as a raw material for various cosmetics, particularly for scalp and hair health.
