    Saccharomyces is a genus of fungi that includes many species of yeasts. One of the most well-known species is Saccharomyces cerevisiae, commonly used in baking, brewing, and winemaking due to its ability to ferment sugars into alcohol and carbon dioxide. This yeast is also a model organism in cell biology and genetics research because of its simple eukaryotic structure and ease of genetic manipulation.
