    measure of free fatty acids in fats or oils

    The Acid Value (AV), also known as Acid Number, is a measure of the amount of free fatty acids present in a fat or oil. It is defined as the number of milligrams of potassium hydroxide (KOH) required to neutralize the free fatty acids in one gram of the substance. This value is important in industries like cosmetics and food, as it indicates the quality and shelf life of the product; higher acid values can suggest degradation or rancidity.
