Production and Biological Activities of Oligo Pectin from Early Immature Fruit of Durio Zibethinus L.

    The study focused on extracting and analyzing pectin from early immature durian (EID) fruits, which are typically considered agricultural waste. Pectin was successfully extracted using distilled water at various temperatures and confirmed through instrumental analyses. The pectin was then degraded into pectin-oligosaccharides (POSs) using specific enzymes to enhance its biological activity. The POSs demonstrated stronger antioxidant and antiglycation activities compared to pectin, as well as promoting hair cell proliferation and providing protection against oxidative stress. These findings suggested that the developed extraction and hydrolysis methods could make the extract suitable for use in cosmetic products.
