Nutritive Value of Casein as Influenced by Alcohol Extraction

    Philip H Derse, H. Nath, C. A. Elvehjem, E. B. Hart
TLDR Alcohol extraction lowers casein's nutrition, causing slower growth and hair loss in rats.
The study found that continuous extraction of crude casein with hot 95% ethanol reduces its nutritive quality. Rats fed with this extracted casein showed reduced growth rates and developed hair loss. Although the alcohol extracts did not enhance growth rates, they prevented hair loss. Normal growth rates were restored when the rats were fed fresh liver. Analysis of 14 amino acids in both extracted and crude casein showed no significant differences.
