This review article discusses the growing importance of colorimetric sensors in food quality and safety monitoring due to their rapid response, high sensitivity, and low cost. It highlights advancements in functionalized nanoparticles and nanoenzymes that have improved detection limits to parts per billion, and the use of modified porous polymer substrates for enhanced sensor performance. The integration of data acquisition and analysis based on color changes is also explored. Despite their potential, challenges such as environmental interference and limited industrial validation remain. The review concludes that combining advanced sensor materials with portable optical devices and online analytical platforms could make colorimetric sensor arrays a powerful tool for on-site food safety and quality assurance.
