Unsaturated fatty acids (UFAs) are a type of fat molecule that contains one or more double bonds between carbon atoms in their hydrocarbon chain. These double bonds create kinks in the chain, preventing the molecules from packing tightly together, which is why unsaturated fats are typically liquid at room temperature. They are considered healthier than saturated fats and are found in foods like olive oil, nuts, and fish.
