    naturally occurring plant compounds that bind to proteins

    Tannins are naturally occurring compounds found in plants, particularly in the bark, leaves, and fruit skins. They are polyphenolic molecules that can bind to proteins and other organic compounds, which is why they are often used in the tanning of leather and in the production of wine and tea, where they contribute to the astringent taste.
