    Gray hair, also known as canities, occurs when the pigment-producing cells in hair follicles, called melanocytes, decrease their production of melanin. This reduction in melanin leads to hair strands losing their color and appearing gray or white. The process is often associated with aging but can also be influenced by genetic factors, stress, and certain medical conditions.
