By applying US at power levels of 300 W, 450 W, and 600 W before enzymatic hydrolysis, the researchers found that US-treated FPHs were lighter in color, less reddish, and had a lower proportion of hydrophobic free amino acids, which may reduce bitterness. Additionally, US-treated samples showed improved protein solubility and a higher degree of hydrolysis compared to the control. These enhancements are linked to a reduction in peptide particle size, resulting in a higher presence of very small and small peptides. Overall, US pre-treatment significantly improved the physicochemical and functional properties of FPH.
