The DPPH Assay, also known as the 2,2-diphenyl-1-picrylhydrazyl assay, is a common method used to evaluate the antioxidant capacity of a substance. It measures the ability of antioxidants to neutralize free radicals by observing the change in color of the DPPH solution from purple to yellow, which indicates the scavenging of the DPPH free radical. This assay is widely used in research to assess the potential health benefits of foods, supplements, and other compounds.
