    Celiac Disease, also known as Gluten-Sensitive Enteropathy, is an autoimmune disorder where the ingestion of gluten—a protein found in wheat, barley, and rye—triggers an immune response that damages the small intestine's lining. This damage impairs nutrient absorption, leading to symptoms like diarrhea, bloating, and malnutrition, and can also cause systemic issues such as anemia and osteoporosis.
