TLDR Red rice is a nutritious super-food with potential health benefits.
Red rice has been identified as a super-food due to its rich nutritional and bioactive properties. It contains high levels of carbohydrates (87.2 g/100 g dw), proteins (9.1 g/100 g dw), and beneficial fatty acids, with MUFAs and PUFAs making up 40.7% and 31% respectively. The study found sucrose to be the predominant sugar and γ-tocopherol as the main tocopherol isoform. The presence of phenolic compounds, particularly flavan-3-ols, contributes to its antioxidant, cytotoxic, antiproliferative, and antibacterial activities, suggesting potential health benefits beyond basic nutrition.
