    The study evaluated the anticancer activity of quinoa and safflower seeds and their effects on non-alcoholic fatty liver disease (NAFLD). In vitro tests showed that quinoa seeds had promising cytotoxicity against the hepatocarcinoma cell line HEPG2, with an IC50 of 14.6 μg. In vivo experiments involved 24 male rats, where NAFLD was induced using a high fructose diet. The addition of 20% quinoa or safflower powder to the diet improved biochemical parameters, reducing dyslipidemia, liver function abnormalities, and lipid peroxidation. The study concluded that quinoa and safflower seeds had potential anticancer properties and provided hepato-protection against NAFLD.
