Phytochemical and Nutrient Analysis of Glycine Max Milk and Okara By-Products, Formulation and Its Acceptability

    TLDR Soybean milk and okara are nutritious, have health benefits, and make tasty, long-lasting food products.
    The study evaluated the phytochemical and nutrient content of soybean milk and okara, revealing their richness in fat and protein, along with anti-microbial, antidiabetic, and antioxidant properties. Products formulated from these by-products, such as Sharjah, Falooda, Smoothie, Chapatti, and Noodles, were highly acceptable based on sensory evaluations by 25 panel members. The products also showed good keeping quality with minimal microbial growth after 3 days of storage, highlighting the potential of soybean by-products in health promotion and as nutritious, cost-effective food options.
