TLDR Pumpkin seeds are nutritious and can improve health, making them useful for cheaper, sustainable food.
Pumpkin seeds, typically discarded as industrial waste, are rich in protein, fiber, minerals, and vitamins, which could make them valuable to the food industry. Their use in food products could enhance nutritional content at a lower cost due to their status as a byproduct of pumpkin fruit. The seeds have demonstrated health benefits, indicating that repurposing this agro-industrial waste could contribute to global food sustainability. However, further research is required to fully comprehend and exploit these benefits.
