The study investigated the use of Mobe (Ficus sp.) and Antarasa (Litsea cubeba) extracts as natural preservatives for red snapper fillets (Lutjanus erythropterus) stored at low temperatures. These spices were known for their antimicrobial properties and were considered potential natural alternatives to synthetic preservatives, aligning with the "back to nature" trend. The research aimed to assess the effectiveness of these extracts in maintaining the freshness of red snapper fillets, which were economically significant in Indonesia and commonly used in fresh form for traditional dishes.
