TLDR Almond and sunflower seed tofu is high in protein and marketed for diets and vegetarians.
In 2018, Livia Nathania Farant developed a healthy tofu alternative made from 500g almonds and 500g sunflower seeds, along with 100ml vinegar and 3.200ml water. The process involved soaking, blending, and straining the seeds and nuts, then boiling and curdling the resulting milk. The nutritional content of this tofu was calculated to be 52.09 kcal of carbohydrates, 52.5 kcal of protein, 283.725 kcal of total fat, and total energy of 362,188 kcal. The product was marketed towards dieting individuals and vegetarians due to its high protein content. The author suggested further research on the benefits and nutrients of tofu made from almonds and sunflower seeds.
